Baked Fish with Quinoa & Winter Veggies

Baked Tilapia with Quinoa, Potatoes, and Yams
Gotta love one pot meals! 

Coconut oil spray
 
 ½ medium onion thinly sliced

1 ½ c. quinoa, rinsed

2 ¼ c. veggie broth or water

4  fish fillets (4-6 oz.) (Frozen Tilapia or Wild Alaskan Salmon)

Organic No-Salt Seasoning (from Costco) or herbs of your choice 

Preheat oven to 450º.  Spray the inside of pot and lid of a covered baking dish – either a cast-iron Dutch oven or a Pyrex baking dish with oven-safe cover.   (I use a 12 inch diameter cast-iron Dutch Oven).

Scatter sliced onions on bottom of pot.  Add the quinoa and pour in the liquid.  Stir to settle the quinoa evenly.  Place fish on top and season with No-Salt Seasoning (or herbs of your choice).

Add one or a variety of diced potatoes, yams, and butternut squash. 

Cover and bake for 50 minutes.

Serves 4
